Bread mix with 22% sprouted whole grain seeds

No flour or other fillers. Exclusively high-quality ingredients for a healthy, wholesome diet. Really good bread doesn't need gluten or yeast! I am your source of protein!

You also add: 300 ml sparkling water (room temperature), 2 tablespoons (20 ml) apple cider vinegar.

You need: A loaf pan - 15 cm long (taller bread, larger slices) or max. 20 cm long (flatter bread, more crust). An ovenproof bowl with 250 ml of tap water.

Preparation: Pour the baking mixture into a mixing bowl and mix dry. Add the sparkling water and apple cider vinegar and mix everything with a wooden mixing spoon for 2 minutes to form an even dough. Cover the dough and let it soak in a mixing bowl at room temperature for 30 minutes. Put the dough in a baking pan that has been greased with oil and smooth it out with a wet spatula. Make a 2 cm deep cut lengthways with a knife.

Baking: Preheat the oven to 225 °C, for a thicker crust to 250 °C. Place the bread and an ovenproof bowl with 250 ml of tap water on the middle rail. Bake first for 10 minutes at 225 °C  and then for another 60 minutes at 200 °C. Or bake for 10 minutes at 225 °C top / bottom heat and a further 80 minutes at 200 °C. At the end of the baking time, make a test with a wooden stick (e.g. toothpick) in the middle of the bread. If the dough still sticks to the stick, increase the baking time by about 5 minutes, then try again. Turn the bread out of the pan while it is still hot and let it cool down on a wire rack.
