Organic Agar Agar
Organic agar agar is extracted from red seaweed and has enormous gelling power: only 5 g of agar agar replace 6 sheets of gelatin in recipes! In addition, Ark Agar Agar is vegan, organic and gluten-free. Especially versatile in use, agar agar gels jello, fine terrines, fruit jellies, fruit spreads or cream pies. For optimal gelation of agar agar, add some mild fruit or fruit juice to very sour fruits. When brought to the boil, Arche Bio Agar Agar smells of the sea, but this quickly dissipates.
For fruit spread, puree 500 g of fruit, add sweetener, 1 tbsp. lemon juice, 1 tsp. (approx. 3 g) agar agar, bring to a boil while stirring, boil for 2-10 min. bubbling, depending on the type of fruit, and pour into prepared jars.
For a firm jelly, mix 2 tsp. agar agar (approx. 5 g) with 500 ml liquid, bring to the boil briefly while stirring, allow to cool. Tip: Agar agar gels when cooled at about 35ºC. Make a gelling test on a cold plate. Agar agar is also a neutral-tasting gelatin substitute in (cake) cream recipes. 2 tsp (about 5 g) agar agar replaces 6 sheets of gelatin (for 500 ml liquid).
For agar agar to gel, it must be brought to a boil. For creams that are not to be heated - dissolve agar agar in a little water or juice, bring to a boil and simmer for about 2 min. Then whisk the liquid into the remaining (unboiled) cream and let cool.
