Vegetable gelling agent for fruit spreads and jelly
The vegan gelling agent Arche Apple Pectin gels particularly quickly and elastically. It is rich in fiber and low in calories. The preparation of sugar-free or sugar-reduced spreads is possible with Arche Apple Pectin. The apple pectin is produced from pomace of apple juice extraction. The so-called non-amidated pectin (E440i) is approved for the production of organic fruit spreads according to EU-BIO-VO. There is no pectin in organic quality yet, because raw materials are not available in sufficient quantity and quality.
For fruit spreads, mix the sachet contents of the vegetable gelling agent with up to 700 g of sweetener. Add the juice of 1/2 lemon to the 1.3 kg of chopped fruit. Bring everything to a boil and simmer for 3-5 minutes, stirring constantly.
For jelly, we recommend mixing the contents of the bag with 500 g of sugar and stirring it into 0.75 - 1L of fruit juice and the juice of 1/2 lemon. Simmer briefly and fill while hot.

Arche apple pectin is not amidated and therefore approved for the production of organic products. Pectin is not yet available in organic quality.
